Try this Sweet Potato Casserole recipe for Thanksgiving Dinner

So far, I have provided some fantastic recipes for Thanksgiving dinner to help make your plans of celebrating Thanksgiving at your Encinitas home a little smoother. Continuing on from my posts for side dishes for Thanksgiving like my turkey stuffing recipe from yesterday, today I have a sweet and deliciously filling side dish to accompany your Thanksgiving dinner – sweet potato casserole with pecan crust topping!

This recipe for sweet potato casserole is enough for 5 people, so plan on adjusting the portions of the ingredients if you will have more guests for Thanksgiving Dinner at your Encinitas house this year. To begin with, you must start with the sweet potato casserole base, and then move on to the pecan crust topping.

For the Sweet Potato Casserole, you will need:
1 ½ Cups Mashed Sweet Potatoes, or a 15 oz Can of Sweet Potatoes Drained and Mashed
¼ Cup of Sugar
1 Extra Large Egg
½ Stick of Margarine or Butter
½ Teaspoon of Vanilla
½ Teaspoon of Ground Nutmeg

Mix everything up to begin with for your sweet potato casserole in a large bowl. Once everything is mixed, get a small square casserole dish and spray with oil or non-stick spray. Then pour in the sweet potato mixture into the casserole dish.

Preheat your oven to 350 degrees, and then begin making the Pecan Crust Topping, which you will need:

2 Tablespoons of Butter at Room Temperature
¼ Cup of Flour
½ Cup of Brown Sugar
½ Cup of Pecans

Blend the butter, flour and brown sugar together in a small bowl. Once blended together, stir in the Pecans. Take the toppings and sprinkle them over the sweet potato casserole in your casserole dish.

Bake the sweet potato casserole in your oven on 350 degrees for around 20 minutes. If you plan on doubling the recipe so you can feed 10, then make sure you get a larger casserole dish and add an extra 10 minutes of cooking in the oven.

The sweet potato casserole will make a sweet and filling addition to your Thanksgiving dinner, but the dish comes out hot so make sure that you have ample time to let it cool before serving to your guests.
